Wood-Fired Dining Taste The Difference! The wood-fired oven in our foyer is handmade in the rural tradition of the bread ovens of Quebec. For generations, these clay, stone & brick ovens provided sustenance to Quebec’s rural families. Used for much more than baking bread, the ovens became a symbol of rural French-Canadian culture. They were often found in the background of paintings, in stories and folklore, and references to ovens and bread making were once very common in everyday language. Time and technology had conspired to make these ovens all but obsolete, but lately they have experienced a commercial renaissance. You see, the secret of a wood-fired oven is in the ability of the oven’s walls to retain heat, food isn’t so much cooked as it is transformed, and good taste never goes out of style for very long.
